The 2007 was an interesting vintage, with early spring frosts and cool wet conditions during flowering, naturally restricting the vines crop levels. Luckily from this inauspicious start the weather warmed up and glorious late summer and autumn temperatures allowed the Sauvignon Blanc to ripen fully. Flavour development was further aided by the cool nights during the crucial period leading up to harvest.
The 2007 Dashwood Sauvignon Blanc was produced from fruit grown in the Awatere and Wairau Valleys in Marlborough. Blending fruit from both regions benefits the wine with the aromatics from the Wairau Valley component, and a mineral note from the Awatere Valley component.
This classically styled wine shows lifted melon, citrus and fresh tropical notes on the nose. These flavours follow through to the richly structured palate, which has a long crisp finish.
This wine is ready to drink now.
Try with goat’s cheese crustini and a fresh green salad. Delicious
