The 2007 Dashwood Pinot Noir was carefully harvested from selected Wairau and Awatere Valley vineyards. Cooler spring temperatures gave us naturally restricted yields for the 2007 vintage, ideal for the concentration of flavour found in the Dashwood Pinot Noir.  A superbly dry autumn allowed us to let the fruit develop to optimum maturity.

 Flavour and colour development were aided by the cool nights during the crucial period leading up to harvest.

 

This wine is the sum of several different batches of Pinot Noir, each unique and contributing something special to the final blend.

Hand plunging during fermentation has crafted a wine with elegance and balance.   

 

This bright garnet wine shows lifted cherry fruit and mushroom notes on the nose.  The palate exhibits ripe black cherry fruit flavours and has soft tannin finish.  This wine is made to drink young, and will show its best now and over the next few years.

Dashwood Pinot Noir is sealed with a screw top to ensure optimum quality.
